Ribeye produces especially rich, juicy bites because of its marbling, while NY strip offers a slightly firmer texture and pronounced beef flavor. Denver steak is another excellent option because it is naturally tender and works well when cut into small pieces.

How to Make Garlic Butter Wagyu Bites

Step 1: Cut and Dry the Wagyu

Step 3: Sear the Wagyu Bites

Add the Wagyu cubes in a single layer, leaving a little space between each piece. Avoid overcrowding the skillet because too many pieces can lower the pan temperature and prevent proper browning.

Let the first side sear undisturbed for approximately 1–2 minutes, then turn the pieces and brown the remaining sides. Depending on the size of your Wagyu bites and your preferred doneness, the total cooking time will usually be only a few minutes.

If you're cooking a larger batch, work in batches rather than filling the entire pan at once.

Step 4: Add the Garlic Butter

Once the Wagyu is nearly cooked to your preferred doneness, reduce the heat. Add the butter, followed by the minced garlic and thyme.

As the butter melts, gently toss the Wagyu bites through the garlic butter for approximately 30–60 seconds. This is enough time for the garlic to become fragrant without burning.

Adding garlic toward the end is important because minced garlic can burn quickly in the high heat used to sear Wagyu.

Step 5: Rest and Serve

How Do You Keep Wagyu Bites Tender?

Should You Cook Wagyu Bites in Butter or Oil?

For a more substantial dinner, serve the Wagyu bites with rice, roasted potatoes, mashed potatoes, or crusty bread. You can also turn them into a quick Wagyu bowl with steamed rice, vegetables, green onions, and a light drizzle of soy or ponzu.

If you're following a lower-carbohydrate eating pattern, pair the bites with leafy greens, cauliflower, mushrooms, asparagus, or bok choy instead.

Common Mistakes to Avoid

Overcrowding the pan is one of the easiest ways to lose that beautiful sear. Give each Wagyu bite enough room to make direct contact with the skillet, and cook in batches when necessary.

Another common mistake is adding the garlic too early. Garlic burns much faster than steak cooks, so wait until the Wagyu is almost finished before adding it.

Finally, don't assume that more butter automatically means more flavor. Wagyu already contains plenty of rich, flavorful fat. The garlic butter should enhance the beef rather than overwhelm it.

Can You Make Wagyu Bites With Leftover Steak?

Yes. If you already have cooked Wagyu, you can use the same garlic-butter flavors, but the cooking method should change.
