  • 2 green onions, sliced
  • 1 cup bok choy, chopped
  • ½ cup shiitake mushrooms, sliced
  • 1 teaspoon neutral cooking oil, if needed
  • Sesame seeds and sliced green onions for garnish

For the Sauce:

  • 2 tablespoons light soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon brown sugar or honey
  • 2 tablespoons water
  • ½ teaspoon chili crisp or chili oil, optional

How to Make a Chinese-Style Wagyu Beef Noodle Bowl

Step 1: Prepare the Sauce

In a small bowl, combine the soy sauce, oyster sauce, sesame oil, rice vinegar, brown sugar, water, and optional chili crisp. Stir until the sugar has dissolved, then set the sauce aside.

Preparing it before cooking is important because once the Wagyu hits the pan, everything comes together quickly.

Step 2: Cook the Noodles

Cook the noodles according to the package directions until just tender. Drain well and set aside.

Avoid overcooking them at this stage. They will spend another minute or two in the pan absorbing the sauce.

Step 3: Quickly Sear the Wagyu

Heat a wok or large skillet over medium-high to high heat. If you're using well-marbled Wagyu, you may need little to no additional oil because the beef will release its own fat as it cooks.

Add the thinly sliced Wagyu in a single layer and sear briefly, approximately 30–60 seconds per side, depending on thickness. Remove it from the pan while it is still tender and set aside.

Step 4: Cook the Vegetables

Using the same pan, add the garlic and ginger and cook briefly until fragrant. Add the mushrooms and bok choy, then stir-fry for 2–3 minutes until slightly softened while still retaining some texture.

Cooking the vegetables in the rendered Wagyu fat helps carry the beef's flavor throughout the entire bowl.

Step 5: Add the Noodles and Sauce

Add the cooked noodles to the pan, followed by the prepared sauce. Toss everything together over medium-high heat until the noodles are evenly coated and the sauce begins to cling to them.

If the noodles become too dry, add a tablespoon or two of water.

Step 6: Add the Wagyu

Return the Wagyu to the pan and toss gently for another 30 seconds or just until warmed through.

Avoid leaving the beef over high heat for too long. The goal is to keep the Wagyu tender rather than cook it twice.

How to Serve It

Divide the noodles between bowls and arrange the Wagyu on top. Finish with sliced green onions and sesame seeds. For more heat, add a spoonful of chili crisp just before serving.

What Cut of Wagyu Is Best for Noodle Bowls?

You don't need an expensive, thick steak for this recipe. Thinly sliced Wagyu or cuts suitable for yakiniku and shabu-shabu work particularly well because they cook quickly and distribute the richness of the beef throughout the bowl.

Moderately marbled Australian or American Wagyu is especially versatile for a full noodle bowl because it delivers Wagyu flavor and tenderness without becoming overwhelmingly rich.
